This may be close in nature to a deli sandwich such as a tuna, or chicken salad sandwich, but honestly that comparison just grossed me out a little. With that aside, chickpea salad is versatile and can be customized to your liking. I used beats, carrots, celery, sprouts and onions because that is what I had on hand, but if you have other veggies, feel free to use those.

1 can chickpeas
Freshly chopped veggies
Olive oil
Vinegar
Tahini
Sprouts
Salt and pepper (and other spices) to taste
Sliced bread (or not if you are just having a salad)
