Christmasy Carrot NonEgg Eggnog

Certain flavours evoke seasonal memories.  If you had to choose the flavour of Christmas it may be a spice blend of cinnamon, nutmeg, clove and ginger.  These are the primary spices that are in most eggnogs, which we vegans should not be drinking, but we can enjoy the smell and the taste in other foods.  Of course the "Christmas flavour" can be different depending on where you have experienced the holidays, but these seem to be the smells and tastes that waft through the cold December air in North America. 

Carrot is a naturally sweet vegetable, surprisingly.  For this reason It lends itself well to desserts and sweet drinks like this one.  This nog is creamy like the original because of the coconut milk, sweet from the carrot and apple, and spicy like your favourite Christmas treats.   

You can either make this juice in a juicer (if you have one) or blender.  It is a sure way to impress your guests with its vibrant orange glow! 

For 3 servings 
  • 1/2 cup carrot juice (3 carrots) 
  • 1/2 cup coconut milk 
  • 1/2 apple juice (3 apples)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom 
  • 1/2 teaspoon ground ginger (1 inch of ginger)
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground clove 
Thin version using a juicer
  1. Slice carrots in half lengthwise and apples into quarters.  This ensures that they will fit into the juice machine.  
  2. Juice each piece one at a time and once its done, juice the ginger knob. 
  3. In a large jar of jug, mix the juice with spices and coconut milk.  
  4. You may simmer this over low heat for a warm version.  You don't want to cook it, just warm it.  
Thick version using a blender 
  1. Dice carrots, apples and ginger.
  2. Add to blender with coconut milk and spices.
  3. Blend on highest setting for 1 - 2 minutes, or until the carrots and smooth. 
  4. If you don't like pulp, you can strain the juice through a fine mesh or cheese cloth.  If you like your juice thick, it is all ready for you to enjoy!
