Vegiterra at Toronto Underground Market (TUM)

We were thrilled to be part of the the Toronto Underground Market (TUM) on July 12.  It was great to be in a delicious, friendly food environment with plenty of vegetarian (and some vegan) options.  

For this event we prepared three sweet potato dishes: 

  • African Empanada (African peanut stew in an empanada) 
  • Crispy Sweet Potato Gnocchi with a cilantro and garlic aioli
  • Yamburger (sweet potato patty with green papaya salad, pickled carrots in a small ciabatta)

It was a great success and the gnocchi were especially popular.   We can't wait to participate in more food events this summer, and in the meantime, here are some photos of us at TUM.
