Watermelon Lychee Juice

While travelling through South East Asia, one will notice various juice stands selling an array of colourful concoctions.  Each country seems to have its own twist on juice making:  Indonesian juices are often blended with condensed milk or chocolate sauce, and although it is not vegan, you can ask for the juice to be dairy free and it won’t be a problem.   In Thailand a lot of blended juices contain salt, which is a surprise at first, but in the hot tropical afternoons the combination of sweet fruit with salt is an excellent way to quench your thirst.  In Kuala Lumpur I found one of the most delicious juice combos while wandering around the shops along the base of the Petronas towers: Watermelon and lychee.  So simple and so AMAZING, much like the impressive twin towers. 
This recipe will make 4 glasses of juice and takes just a few minutes to prepare.  Using canned lychee will save you a lot of time from peeling and pitting and is a lot easier to find in most parts of the world.
  • 2 cups watermelon, cubed
  • 1 can lychee (liquid as well)
  • 1 cup ice cubes

  • Put all ingredients in a blender and blend until a uniform slush.  Drink on a day where you need a tropical sugar fix.
