Raw Vegan Almond Flax Balls



In Canada, many people consume a snacks called a Timbit, which is a fried doughnut hole made by Tim Hortons.  They are the perfect shape and size for popping into your bouche, though they are covered in sugar and are deep fried, making them not the healthiest snack choice.  So what to do if you want something round, yummy and healthy?  Well that is up to you, really, but you are welcome to try this raw vegan ball if you wish! 

These balls are roughly the same size as a Timbit but are raw, somewhat crunchy and delicious!  

This recipe can be prepared within twenty minutes and will last quite a few days 
(if not weeks) if chilled. 

  • 1 cup almonds
  • 3 tablespoons flaxseeds
  • 2 cups water
  • 3 tablespoons coconut oil
  • 4-6 pitted dates
  • 1/2 cup split quinoa 
  • 2 tablespoons coconut sugar (jaggery) 


Method

  • Soak almonds in 1 cup of water for 10 minutes, drain and set aside
  • Soak flaxseeds in 1 cup of water for 10 minutes, drain excess water through a fine mesh and reserve the flax seeds and goo 
  • In a food processor, mince the almond seeds 
  • Add the remaining ingredients and blend on high-speed until combined
  • With clean hands, rip small pieces of dough and form small, (3 cm) balls.  
  • Serve right away, or allow them to chill and solidify for a more crunchy texture.
