Lychee Almond Soda

This has got to be one of the easiest and most refreshing drinks that I have ever consumed.  While wandering around the streets of Singapore I discovered this gem from several different hawker stalls.  It sounded interesting so I decided to try it, and was hooked! 
Singapore is a very hot city, so it is important to drink constantly and there is no shortage of juice stands.  Originally I tried this juice with longan, a small hard shelled fruit that tastes similar to lychee but more dry. Because longan are hard to find in some places, I have substituted this recipe for lychee.  
For one serving
  • 4 tbsp almond syrup 
  • 4 lychee, peeled and pitted 
  • carbonated water

  • Pour the almond syrup and lychee into a glass and top off with carbonated water.  This combo of flavours is otherworldly!
