Easy Plantain Fritter

This recipe only contains two ingredients: Plantain and rice flour.  This can be made in 10 minutes and is a great alternative to the regular pancake breakfast, or afternoon snack.

For two fritters 

  • 2 ripe plantains (with black spots) 
  • 1/2 cup rice flour 


Method:

  1. With a fork, mash the plantains into a paste 
  2. Add the rice flour and stir until combined
  3. Heat a non-stick frying pan on medium heat and spread half of the mixture, flattening it to a uniform thickness.   (you may need to add oil if your pan is old) 
  4. Sear each side of the fritter for 3-4 minutes until golden brown. 
  5. Serve with tamarind sauce, or your favourite sweet, or savory topping.
