This recipe only contains two ingredients: Plantain and rice flour. This can be made in 10 minutes and is a great alternative to the regular pancake breakfast, or afternoon snack.
For two fritters
- 2 ripe plantains (with black spots)
- 1/2 cup rice flour
Method:
- With a fork, mash the plantains into a paste
- Add the rice flour and stir until combined
- Heat a non-stick frying pan on medium heat and spread half of the mixture, flattening it to a uniform thickness. (you may need to add oil if your pan is old)
- Sear each side of the fritter for 3-4 minutes until golden brown.
- Serve with tamarind sauce, or your favourite sweet, or savory topping.
